I can't lie: I wholly use Independence Day as a reason to stuff my face with hamburgers and hot dogs. Having acquired a Blackstone griddle this year, Kathryn and I invited our good friends Rebecca and Ben over to celebrate with a feast. They had graciously done the same for us this previous year.
When I first took ownership of the griddle, I was inundated with a flood of recipes to try. The resounding starter recipe everybody recommended was onion smash burgers. It seemed that the only instructions were to drop some onions and beef on the range before flattening. I decided to try exactly that, and let me tell you - it will be a while before I try another method. They turned out perfect! I'm crossing my fingers that somebody purchases us the flattening iron from our wedding registry, because I can't even imagine how the food improves from here.
